So what is corn?
It’s definitely not a vegetable, that’s for sure.
Corn, like wheat and rice, are caryopses, technically the dried fruit of the reproductive part of the plant.
The fruit of a sweet corn plant is its kernel, and to get even more technical on you, corn is a monocot, like many grasses, because it has one seed leaf instead of two, which would of course make it a dicot.
And since corn is a monocot, there are always an even row of kernels — count ’em if you don’t believe us.
But no matter what our state legislator’s believe, corn is definitely not a vegetable.
